One Dish Chicken Dinner

One Dish Chicken Dinner
Today I want to share with you a very easy and delicious one dish chicken dinner.  It was an instant hit at our house and my husband raved about the seasoning.  The "seasoning" is the "magic" ingredient and is so simple:  Italian Dressing Mix!

Yes, the Italian Seasoning Mix is the magic ingredient that makes this dish so, tasty and so, easy!
The other ingredients are equally simple and straightforward.

One Dish Chicken Dinner 
  • 3 chicken breasts
  • 4 medium red potatoes
  • green beans (or broccoli!)
  • 1/2 stick of butter, melted 
  • Italian dressing mix packet

Now, in keeping with my philosophy of using what you have, I used Yukon gold potatoes instead of the red potatoes.  That is what I had on hand.  The same goes for the Italian Dressing Mix.  I used this particular brand, because it was in the pantry.  I'm sure other brands would work just as well.

Preparation was easy.  

​​Spray a casserole dish with a cooking spray.

Cut the potatoes into quarters.

Clean and cut green beans.

Arrange cut up chicken breasts in the center of the pan.  Lay the green beans to one side and the quartered potatoes on the other side.

​Lastly, sprinkle  at least half of the the Italian Dressing Mix over the chicken, beans, and potatoes.  Melt a half stick of butter and drizzle over everything.  

Cover with aluminum foil and bake for about an hour.

Now, pour yourself a glass of iced tea or wine, sit down and relax, while your dinner is cooking in the oven.    (Or, if you are like me, you have to wash up the very few dishes you used in preparing this dish, and then sit down.  One of the benefits of this meal is the minimal dishes used in preparation.  Clean up is a breeze!)

This one dish chicken dinner is so easy and so delicious!
The meal is ready to plate and partake!  I apologize for not having a photo of the plated dinner.  My husband ended up working late on this particular night. By the time he got home, the dinner was ready, we were hungry, and we sat down and ate.

The chicken was very moist, the potatoes were just right, and the Italian seasoning added the perfect seasoning to all of it.  This one dish chicken meal is a keeper.  We will be making this again and again in the future.  It is a dish that I would happily serve to family and guests.  And...I might not mention to anyone how truly, simple it is, or the magic of the Italian Dressing Mix.  One doesn't need to share all of her culinary secrets!
